Ishpinku (Ecuadorian Cinnamon)

This bar features the spice ishpinku, which is the floral calyx of Ocotea quixos. This is a hardwood lowland rainforest canopy tree native to Ecuador & Colombia, and these calyxes were collected from an ishpinku forest cultivated by the ASOANE cooperative as part of their reforestation initiatives. It is in the same family as Ceylon cinnamon, and shares some flavor characteristics, but has a stronger mint top note and is much more aromatic overall.
