A pack of six miel de cacao truffles in 75% dark chocolate shells.

When a cacao pod is freshly harvested, the seeds are enveloped in a sweet white pulp (see photo). For heirloom cacao varieties, this pulp has an array of textures and flavors. In some pods, the pulp is substantial and filling, while in others it barely covers the seeds. The flavors of the pulp can range from smooth and tropical (banana, guanabana, vanilla) to varying ranges of tartness and intensities with notes reminiscent of kiwi or various citrus.

To make the miel de cacao, the pulp is collected during the harvesting process and then slowly reduced over low heat. The reduction process concentrates and intensifies the fruity flavor elements, resulting in a ‘miel de cacao’ that is the consistency of honey with flavor dominated by pronounced tropical tang and notes reminiscent of tart tamarind concentrate. This unique truffle has miel de cacao enclosed in a 75% dark chocolate shell for just the right balance of tart, sweet and chocolate.
