Our 75% dark chocolate bar topped with panela (unrefined cane sugar), which is maple sugar’s close cousin.

Like maple sugar, panela is unrefined cane sugar (i.e., nothing more than boiled cane juice). This panela was handmade at Finca Rosales in Pacto, with their own organic sugar cane. The cane was processed in a traditional trapiche, where cut cane is crushed to obtain the sweet juice, boiled for hours in long and flat pans, and then rolled into granules (the ‘caramelitos’ that are on this bar). This panela is a completely different food than refined white sugar: it still contains essential minerals and molasses, resulting in a full-flavorful and full bodied sugar that is an absolute delight.

Choose from a 75% bar with just panela, or a bar with half panela and half maple sugar.

Each bar is handmade with love, and no two bars are exactly alike ❤️
